Lately I've been having grits for breakfast, I put them in a rice cooker on the porridge setting and time them overnight. I've tried Marsh Hen Mill, Atkinson, Professor Torbert's, Bob's Red Mill, and Palmetto Farms. Palmetto Farms is quite good, these here are the best.
I aim for a certain texture, and with Palmetto Farms, I get it with 1/3 of a cup grits, and 12 oz of water. With the Carolina Plantation, it's 1/3 of a cup and 16 ounces of water. That's how much more they'll plump up, and Palmetto Farms is already some good cookin.
The texture is: I don't want to say smoother, these are grits, but softer perhaps. The bits are just slightly more plump, and the hominy flavor really comes through. Simple and satisfying, and I do not tire of them.
